Edomae Style Omakase Explained
Edomae (江戸前) means "in front of Edo" — old Tokyo. Edomae sushi grew up before refrigeration, so chefs cured, marinated, simmered or aged fish to keep it and to deepen its flavour. It is not simply fresh fish on rice; it is prepared fish on seasoned rice.
Edomae in brief. The fish: treated — cured, aged, simmered or marinated. The rice: seasoned with vinegar, often red vinegar, served near body temperature. The seasoning: the chef brushes on nikiri — don't add soy. Where in Hong Kong: Sushi Wadatsumi, Kanesaka, Mikasaya, Sushi Hare.
How Edomae fish is prepared
Kombujime: white fish cured between sheets of kelp for extra umami. Shime: silver fish such as kohada and saba salted and vinegared. Zuke: lean tuna marinated in soy. Nitsume: anago (sea eel) simmered and brushed with a sweet glaze. Aging: tuna and some white fish rested for days to concentrate flavour. Boiled prawn (kuruma ebi) served warm.
The rice
Edomae shari is seasoned with vinegar, salt and sometimes akazu (red vinegar made from sake lees), which gives a darker, deeper rice. It is served warm, near body temperature, so it loosens as you eat it.
The seasoning
The chef brushes each piece with nikiri — a soy-based glaze — or adds salt, citrus or nitsume. That is why you shouldn't dip Edomae nigiri in soy: it is already seasoned. See wasabi and soy sauce.
Where to try Edomae in Hong Kong
Sushi Wadatsumi at K11 MUSEA (one star) began as Tokyo's Ginza Iwa in Hong Kong. Kanesaka in Central is the Hong Kong counter of Tokyo's Sushi Kanesaka. Mikasaya in Causeway Bay is chef-owned Edomae since 2023. Sushi Hare in Sheung Wan is one of the city's hardest bookings. See the best omakase in Hong Kong.
Order kohada. Gizzard shad, salted and vinegared, is the classic test of an Edomae chef. If it is balanced — not too sour, not too fishy — you're in good hands.
Edomae vs "fresh" sushi: Edomae focuses on preparation and rice · modern "fresh" styles focus on raw fish and toppings · Edomae nigiri is smaller and pre-seasoned · both can be excellent.
Aged is not old. Properly aged fish is handled under strict temperature control. It is a technique, not a shortcut. Still, anyone who should avoid raw fish should avoid Edomae nigiri too.
