Order enough, waste less
How Much Sushi to Order per Person
The simple rule: 10–12 pieces per person when sushi is the main meal, 6–8 when there is other food. Adjust for appetite, time of day and how much of the platter is rolls versus nigiri.
Pieces per person. Light snack or with other food: 6–8 pieces. Main meal: 10–12 pieces. Big eaters or teenagers: 15+. Children: 5–8, mostly cooked. Sashimi as a starter: 4–6 slices.
What a "piece" means
One nigiri, one gunkan or one slice of a cut roll counts as one piece. A nigiri is more filling than a thin maki slice, so a roll-heavy platter needs more pieces. Futomaki (thick rolls) are the most filling.
Real examples
Dinner for four as a main: 40–48 pieces — for example, Sushi Express's 30-piece Party Box plus a 16-piece Classic Platter, about HKD 300. Party of ten with other food: 60–80 pieces — sen-ryo's 42-piece platter plus a 28-piece platter. Office meeting of 8–10: a catering set such as Sushiro's, listed at HKD 1,200. See sushi platter price guide.
Mix raw and cooked
For groups, aim for about a third to a half cooked — tamago, inari, unagi, cooked prawn, tempura rolls. That covers children, pregnant guests and anyone avoiding raw fish. See sushi without raw fish.
Order 10% extra of the cheapest items (rolls, inari), not the premium ones. If you run short, those are what people fill up on anyway.
Adjust for: lunch (order less) · evening drinks (order more) · hot sides like karaage or udon (order less) · long parties (serve in two rounds so fish stays cold).
Don't over-order raw fish. Leftover sashimi and nigiri can't be saved safely. Throw away anything left out more than about two hours. See how to store sushi safely.
